The Forge in Chester appoints new Head Chef

The Forge, within Hotel Indigo Chester, has appointed a new Head Chef. Neil Aitken, who has been a Chef for 14 years, has worked predominately in Michelin-starred establishments. He has previously worked as Sous Chef at the Chester Grosvenor in the Simon Radley Restaurant as well as the Arkle Restaurant within the same hotel. Prior to that he worked at the two Michelin Star Midsummer House in Cambridge.

Neil, who has lived in Chester for nine years, is married with two children who were both born in Chester. He is super passionate about food and fresh local produce and loves cooking over fire, using Yakatori and Josper.

The Forge, which was awarded 2 AA Rosettes for Culinary Excellence in 2023, is one of Chester’s best restaurants. Opening in 2021, the 70-seater restaurant, has a passion for wild, sustainable British ingredients. The open kitchen cooks over wood and charcoal, using wild and locally reared meat, that is aged on the premises.  Although predominately meat led, The Forge also offers diners a choice of fish, vegan and vegetarian dishes. The Forge also works in collaboration with Aubrey Allen, a third-generation family business and suppliers to the Royal household, who supply ethically sourced, naturally produced meats.
